We passed through Tetouan, the white city, very briefly. It is in the northern part of the Rif Mountains with a UNESCO preserved ancient medina. About ten kilometres away is the Mediterranean Sea. It was the capital of the Spanish Protectorate for 43 years and certainly I could see and feel the Spanish influence. Most of the locals speak Spanish whereas in southern Morocco French is spoken nearly everywhere. I noticed in some shops there was a dessert that is not seen at all in the South...it is a relative of the creme caramel but is called cheese flan or Moroccan custard....identical to Mexican flan in appearance. Our time in Tetouan was fleeting but I certainly want to return...just to eat more cheese flan !
