We think Morocco is just all about the tagine but salad is a mainstay here too. Salad can be found on nearly every menu. And so it should be as the local markets overflow with an abundance of health and colour in the form of fresh vegetables. Lucky me as I am a salad eater and lover. My lunch yesterday came in six small bowls. Laid before me were six tastes of Morocco, six petite samples of six piquant salads. Salad cru, preserved carrots, couscous redolent with cinnamon and sultanas, grilled mixed peppers, a chunky dip of soft smashed aubergine and a spreadable sweet pumpkin mash. Every Moroccan flavour showcased.
