I recently enjoyed this summer cocktail and loved the innovative tropical presentation. It was an alcohol free fruity spritzer of orange and mango. Furls of lightly toasted coconut formed a tiny mountain on top with silver dragees scattered around like mini volcanic rocks. These silvery balls are usually seen on cakes and pastries.
but looked so pretty on a drink. My fear was they would rush up the straw in a whoosh like pearl tapioca does in bubble tea but they were luckily a weeny bit too big for that. The dragee is also sometimes called a silver cachou - not cashew as in nut !! It seems it has a history back to the Middle Ages when a tablet, prescribed by the apothecary, was sugar coated for easier swallowing and we all know that a spoonful of sugar helps the medicine go down !!! Now confectioners make them, no tablet involved, just the sugar. Such a great idea from that barman I must say !!
