Tarte Tatin [ an upside down caramel apple pie for those not in the know] has a history going back to the early 1900’s where it was born from a mistake at the Hotel Tartin in the Loire Valley. The cook apparently put the cooked and sugary sliced apples into a pan with the crust on top in error. When inverted onto a plate it was discovered that the apples had caramelised and then on serving, it was so well received that it became a signature dish. I have never made one as I have never owned the right pan with an ovenproof handle but one day I hope to try recreating this classic dessert. Until that day I will have to just enjoy ordering and eating tarte Tatin in cafes. There is luckily a French cafe here in Marrakech that serves many beautiful, traditional pastries and cakes including their glorious version of apple tart Tatin. Sublimity is attained, no less, when cream and ice cream appear with it, a divine trio on the plate. Enjoy with a long black, Moroccan sunshine and good friends.
