Totally addictive is my first and foremost comment. This seller and his delicious peanuts were in the centre of London and provided a sweet snack on a grey bleak day and I have been thinking about them ever since. Now back in Marrakech I thought I would see if I could re create a similar snack. I have located a recipe with a bit of a twist and it is posted below. Seems to be the type of thing I will have to watch like a hawk or face a black charred disaster. I will let you know what transpires.
Ingredients
- 16 oz unsalted peanuts
- 1/3 cup honey
- 1/2 tsp crushed red pepper (optional)
- 1/2 cup sugar
- 1/2 tsp salt
Instructions
- Preheat oven to 350.
- Line a baking sheet with parchment.
- Place peanuts in a medium bowl (large enough to stir the peanuts).
- Microwave honey and crushed red pepper in a bowl for 30 seconds and pour over the peanuts.
- Add half of the sugar and the salt, stirring well.
- Spread onto the baking sheet in a single layer and bake for 20 minutes, stirring every 5 minutes, making sure to stir the peanuts on the edges in to prevent burning.
- Let cool for 2-3 minutes and then stir the peanuts, scraping the honey from the parchment to coat the peanuts.
- Sprinkle with 2 Tbsp sugar and stir again.
- Sprinkle with remaining sugar and let cool completely.
- Break up the peanuts into single/smaller pieces and store in an airtight container.
I wonder if you could make them in a pan instead of in the oven - might be easier to keep an eye on them and make sure they don't burn.
I love this recipe for sweet & spicy nuts - you can adjust the spices according to how hot you want them - I use chipotle powder & paprika :-) And I like pecans, cashews, and almonds with pumpkin seeds mixed in :-)
