As I came through the souks yesterday afternoon I found a seller sitting on the ground with about a dozen bunches of asparagus for sale. I am presuming, but may be wrong, that it is the first of the very limited season as I have not seen it for sale anywhere else or on a menu. Maybe because of such reduced availability [except for the horrible tinned stuff ] it is know as the food of kings.The spears were very thin [my favourite] and a paler green than the variety I used to purchase in Melbourne. I have since learned that asparagus has been grown as a crop for over 2,000 years and is highly nutritious. It still grows wild in some areas of Poland and Russia but not in Morocco where it is farmed and a major export item . I hope I see more !!! A quick blanching and it goes with eggs beautifully.
Lovely.... We're starting to see more green asparagus here, but the French (as well as the Germans, Spanish....) prefer white. But we won't be seeing any of it for at least 2 months.... Sigh....
