There are so many Moroccan sweets, mainly a variation on a theme in different shapes. Mostly they involve some type of pastry enveloping a nut mixture or dates or figs. They are either glazed or decorated and always resemble little jewels. Last Saturday we witnessed the making of phyllo, the glazing of a variety of sweets and the creation of a 'pin cushion' style cookie [my name for it !!]
A circle of pastry, a ball of almond meal flavoured with orange water , some precision wrapping and then the decoration can go ahead. The instrument that is used to create the pinched pattern is a mini type of strawberry huller. So after the crimping, tiny green flowerettes are cut from pastry and layered to create supposedly a stem. {Mine were a bit skew whiff !!!! So more like a pumpkin than a pin cushion by then end.}
These look really cute - but to me (without the leaves) they look more like sea urchins!

It must take so much time to make one of these cookies, and then it disappears in a few bites! These ladies must love making cookies - or at least have an amazing amount of patience!
