Yes we are still eating Christmas cake ! My mother, a true traditionalist, makes the same Women's Weekly Celebration cake every year, then she makes the marzipan and then she makes the royal icing. It is dark and heavily laden with fruit and can only be eaten in small serves, hence it lasts well into the New Year. I never make this type of cake and cannot quite see myself ever doing so as just the chopping of the fruit is a mammoth undertaking. Luckily my mother is certainly not about to relinquish her Christmas cake making role but if she ever does I will be hoping my sister steps up as I could never match this wonderful, annual, festive and traditional contribution .
