Wow, what a find !! I have adapted a recipe for Coconut Quinoa Granola from a blog called Sweet Pea's Kitchen. I have left out a lot of the ingredients including the sugar and coconut oil and made a much more basic variation as a trial. I used oats and quinoa, combined with honey, cinnamon, vanilla and a slurp of vegetable oil. My choice of dried fruit was a large handful of diced dates. I baked at 220 C, watching it like a hawk , running a fork through it every 10 minutes, for half an hour with a fabulous and delicious result. Two huge taste pluses for me are that I cannot taste the vegetable oil and the quinoa has lost that earthy flavour it so often has. This granola recipe can be changed up and down and around very easily with a multiple of additions and subtractions for those with various food intolerances. I'm hooked but now need to see what the rest of the family thinks !!
That sounds delicious.... I need to make something like this to have on hand for snacking - when I let myself snack again LOL

What an interesting idea, Kate. Did you soak the quinoa first? That is recommended when boiling it to remove a coating from the grain - just wondering if that is necessary when toasting it.
