When the children were small pancakes appeared at weekends quite frequently but now are a rarity. At the weekend we re-enacted that particular childhood ritual. I have never been great at pancake making. Yes I can whip up the batter but once we get to the flipping bit, things rapidly go pear shaped and I get bits of batter all over the stove and pan and the pancake becomes a distorted clump.
This time things went well. Patience is a virtue with making pancakes I have decided and the golden rule must be DON'T FLIP TOO EARLY. Patience is not my strong suit but I held off and the results, while not quite Pancake Parlour standard, were ok and were edible especially once lemoned and sugared.
A pancake with lemon juice & sugar is a lot like a Beavertail - but healthier! I don't make pancakes often either, but I always enjoy them when I do :-)
