I think if there was a survey amongst the cake eaters and cake lovers of this world that the classic lemon syrup cake would easily be in the top 10, if not the top 5. A buttery cake doused in lemon syrup is hard to go past. My mother made it always in a loaf shape. I always make mine in a shallow oblong pan. But I have method in my madness as with my way more cake gets to soak up the syrup and for me that very moist and lemony bottom layer of cake is the best bit of all.
