An enormous 1 kg bag of frozen blueberries from Costco is $6.29 . I try to keep them in the freezer all the time. This weekend they seemed to breed and I found I had 2 big packs so got busy baking. I did a Blueberry & Apple Bread Pudding with one end made with gluten free bread and then made muffins today to serve warm for breakfast. Once cooked, thankfully, the food is nerver as purplish as the batter seems.
Last night S was tired and had sat hunched for 4 hours doing homework so her back was bad. She filled her hot water bottle and I made a 'special' hot chocolate for her. The secret and winning ingredient being cinnamon. She said it was one of the best she had ever had and slept like a baby, all night.
I recall there was a book once called "Gentlemen Don't Eat Quiche" and if that is true then it really is their loss. If there had been gentlemen diners at house tonight then they would have gone hungry whilst we devoured this luscious spinach and bacon quiche in it's phyllo nest. I rarely fiddle making pastry and don't even often buy it but find phyllo a quick and less fattening option when a pastry base is called for. I had a heap of baby spinach leaves to use and after two salads already this week I knew something a little more inspiring would be appreciated.
I needed to make a birthday cake for T so found a deep, rich brownie type torte recipe. It was imbedded with nuts and diced dried cranberries for crunch and zing. It was easy to do and made a huge batter. I was scared I had overcooked the cakes as there was a minute area of edging that got dark but this was not the case thankfully and once covered in ganache the brown edge was only known to me.
We cut this cake to have with coffee at the ungodly hour of 7 am proving one can really eat cake at any time of day or night. It made a pretty rich breakfast and certainly one that would not have got the Heart Foundation tick. Happy Birthday T !!!!

Today, being a perfect spring day, was an ideal day for a road trip. S & R decided that Teselaars Tulip Farm would be their destination. See the tulips !!
My go to for recipes is food.com and when I had so many bananas needing quick use I went to my favourite site. I typed in banana cobbler and found a great recipe and after a minor bit of fiddling I had a fab result. A vanilla cake batter is chock a block with finely sliced bananas and a layer of oaty crumble goes over the top - just so yummy !!

Here is a sporting event that nearly every other Australian, bar me, finds riveting, spell binding and almost the highlight of their year. I have no clue about it, nor do I want to. Maybe it is because I grew up in a family of girls and thus it was not a constant topic or activity. What a blessing is all i can say !
