I love to bake for my family and we all love to eat homecooked cakes and cookies and muffins. But I do try to make healthy choices on the whole and these muffins fit that bill. It is easy to do and as with lots of recipes using bran just needs it to be soaked for a short while. With these muffins, the recipe calls for the bran and raisins to be soaked in pineapple juice but O.J. or milk could be used equally as well. Any sort of bran could be used - bran flakes, bran buds or bran stix. Any sort of dried fruit also could be used.
