I am packing up the house, trying to pack one box per day. I am, of course, unearthing hideous things from the back of cupboards and filling rubbish bags with useless and/or ancient objects. The food cupboard being no exception. I found a packet cake mix - over a year old - for a Pandan chiffon cake. Being bored with my boxes, this provided me with a baking opportunity, a very green one. I had packed my bundt tin so I made a Pandan chiffon slice. Pandanus leaves are used a lot in Asian cooking, giving a nutty fragrance to rice etc. I am unsure if this cake mix bore any relationship to pandanus leaves. It called for 7 eggs and I had 5. It called for coconut milk but I had to use sour cream instead and any nuttiness was supplied by me as I ground up a whole stack of walnuts and threw them into the batter. Of course my result bore no resemblance to the picture on the packet. Thankfully mine was not as green !!
