I ate Bread & Butter Pudding all through my childhood. I have always loved it perhaps due to my passion for comfort foods. I have made all manner of bread puddings over the years for my children using various types of bread, adding fresh fruit, using dried fruit even using hot cross buns. Today I made a break through in the bread pudding department. I made this oldie but goodie in the microwave and it was a big success. Texture wise it was faultless. I made it with big shaggy breadcrumbs as I did not have time to stand cubing bread and added fresh peaches and then the custardy bit was brown sugar, eggs and skim milk. This was one successful pud and was done after 12 minutes in the microwave on medium high. So to all those bread pudding lovers you can now almost have instant gratification like we did today.
You keep cooking foods that I love! Mmmmmmm, bread pudding! I once made a great bread pudding with lemon sauce, but I lost the recipe :-( I do have a good one from an Amish cookbook, though.
