This is comfort food but elegant comfort food if such a thing exists. It is also fabulous hot or cold and needs no adornment - and by that, we all know I mean cream. In fact one morning I had this for breakfast with raspberries and it was just delicious. The recipe called for brown rice but I decided to use arborio rice and so achieved a sort of dessert risotto. I used skim milk and only a little sugar. Apricot puree is swirled through in the final stages of cooking. My puree was very chunky, by design. I am not familiar with anything Persian other than cats and carpets but we have all enjoyed this little foray into Persian cooking.
