Having purchased so much fresh produce meant I had to get into the kitchen so along with an enormous fresh salad we had last night, I made a Winter Fruitcake {although it's summer} and an Easy Praline Pear Pudding. The salad was full of cos and tom thumb tomatoes and tiny diced radishes and cucumber, all fabulous and fresh from our morning market trip.
The Winter Fruitcake is like a bread and butter pudding, but no butter. Breadcrumbs, diced apples, eggs, milk, dried fruit of your choice and lots of cinnamon plus a tiny bit of brown sugar become a firmish baked dessert that can be cut and served in wobbly wedges.
The Easy Pear & Praline Pudding was really and truly quick and easy. I had to urgently use the pears from the market as they were sold cheap because they were looking very sad. This dessert was akin to a self saucing pudding. Diced pears and almonds went into a pudding batter and a basic caramel sauce of butter, brown sugar and boiling water was poured over the top. This was not a weight watcher's pudding especially when served with a blob - a big one - of cream.
Your choices looked so tasty! You made a really good use of those fruits and vegetables you bought!
