Eggsellent Baked Eggs

Here is a quick and yummy meal served on a bed of iceberg and avocado. I had not ever baked an egg till this one at the weekend and it is baked on a layer of cheese - easy and pretty scrumptious. I used reduced fat cheese so it is a reasonably low fat meal. The title of the recipe was Welsh eggs and I remain unsure why this was so. I have been to Wales and do not recall their eggs as being different to eggs the world over. I know Wales is famous for lamb, men's choirs, mining for coal, Tom Jones {he is the singer women throw underwear at - why is a total mystery to me, but I digress], Dylan Thomas {he wrote Under Milkwood, a play with a character in it called Organ Morgan] and the old,old movie How Green was my Valley. But eggs ?? Maybe this , though, is the recipe to put Welsh eggs on the map. We certainly loved it !!
