Thank Heavens for Pantry Staples.

I have been caught short ! I have a lovely green salad and a perfect avocado for dinner but horror of horrors - no dressing ! I was wanting something a little more substantial than a viniagrette. So I set out on a hunt !! On my search through the cupboards I unearthed some vintage grocery items ripe for the rubbish bin but also found the ingredients for a spicy mayo dressing to make my salad more into dinner than a side dish.

Peanut/coconut/chili dressing is pretty easy to make and it is SOOOO good!
