This is such a fabulous recipe and dessert. Pancake batter is poured over diced apple and baked in the oven . You can serve it in slices when it cools a bit. I, in fact, made it 2 days running last week as it was such a huge success and it travels OK in a container for school lunches too. Any fruit could be used but I diced up 3 big apples, left the skin on and 'stewed' them in the microwave whilst making up the batter which, happily, contains no butter. Even though I greedily yearned for cream, it actually does not need it and I was quite content eating it without that extra dollop of fat !
