It does not have to be Shrove Tuesday here for us to eat pancakes. We love them anytime and so we had them on Wednesday, banana ones. I always have problems though and make a hideous mess with the flipping and there is endless eye rolling and moaning from various offspring as they see very odd shaped splunges coming their way. I was overjoyed not long ago to hear a cooking expert on TV saying you usually need to throw the first pancake away, so even TV experts must have splunges,even if only one. I fiddle with the gas flame, I lift edges checking, I
flip too early or burn the thing and flip a piece of charcoal. To add insult to injury the dogs loiter knowingly !!

I once read some tips from Martha Stewart, and forgotten most of them, but I'm sure she also said expect to throw away the first one. I think she also said it is a common mistake to put too much butter or oil in the pan and it makes matters worse. You are supposed to keep a dedicated "crepe pan", don't wash it, just wipe with a bit of oil on paper towelling to conserve the flipping surface.
